Well now that you’ve picked all those apples what do you do with them?
How about try this Apple Souffle’ for breakfast?
3/4 cup milk
3/4 cup flour
1 tsp. sugar
1/4 tsp. salt
2 tbs. butter (melted in pie plate)
5 apples peeled and wedged ( I like to use Granny Smith best!)
2/3 cup sugar
1/2 cup brown sugar
1/4 tsp. cinnamon
1/8 tsp. nutmeg
2 tbs. butter
To make Bottom;
Mix eggs, milk, flour, sugar and salt.
Melt 2 tbs. of butter in pie plate.
Pour in batter.
Bake in oven at 425 Degrees for 20 minutes or until golden brown. (This will rise.)
To make topping;
Melt butter in frying pan.
Put apple wedges in the pan along with sugar, brown sugar, cinnamon, and nutmeg.
Squeeze lemon juice over apples.
Cook apples until slightly soft.
Have the bottom in the oven cooking when you start the topping. Soon as your bottom is baked pour the apples over and it is ready to serve.
This recipe came from my Dad who acquired it from a bed and breakfast owner years ago. I think I may have tweaked it slightly since he gave it to me years ago.
